Do you like rocket? If yes, then you will LOOOOVE rocket pesto!
My friend Rosa loves pesto. So, as a Christmas present, I made some lovely rocket pesto for her. Unfortunately, before I managed to give it to her, I ate it all. This is very typical for me when I decide to give food gifts to friends and family! It was soooo good! I made another badge of this green goodness and gave it to her this week and now I’m waiting to hear if she has also falling in love with it, same as me.
And because I was asked “how I” make my pesto… here it is. In 3 easy steps! Yup, it’s that simple!
Rock your world ROCKET PESTO recipe
To make one small pot you will need:
3 handfuls of fresh rocket
3 tbsp of olive oil
3 tbsp of grated parmesan cheese
3 tbsp pine nuts
3 garlic cloves
a bit of salt
a bit of fresh ground pepper
How to make it:
1. Heat a pan and lightly dry roast your pine nuts. This will release all the nutty and creamy flavour of them. When they start smelling gorgeous and are a little brown, then take them off the heat and stick them in your blender.
2. Keep your pan hot and dry roast your garlic – unpeeled. I love the taste of garlic but my stomach isn’t a bit fan so we agreed that if I toast garlic then it will be happy. Plus, when you roast garlic, it becomes a bit sweeter and it doesn’t over-power all the other flavours in the pesto. Once done, peel the garlic and add it to your blender.
3. Now add to your blender: rocket, olive oil, grated parmesan cheese, a bit of salt and a bit of pepper. And: BLEND.
That’s it! Easy peasy and supper yummy.
We love to eat our homemade pesto with pasta (I also add some cherry tomatoes, it’s lush) or on fresh bread.

I’ve recently made kale pesto which was delicious and quite cheap as the kale was on the turn and would have been chucked otherwise. Also big fan of rocket pesto too. Have you tried coriander pesto? A x

I’d say coriander as I absolutely love the taste, used to think it smelled of vomit but no longer!

Re pine nuts, I didn’t bother (too expensive!) but parmesan yes.

Hele, ja Jo většinou sním do 5ti dnu, ale myslim, ze i týden by vydrželo. On to ten olej hezky zakonzervuje.
